Our Story…

The idea of creating a small restaurant has always intrigued us. We wanted an intimate café/bistro with fewer tables and a family-size staff. We wanted to partner with a talented chef who loves making great food and simultaneously lives and breathes hospitality to our staff and guests. After watching a documentary and movie about Julia Child, we knew French cuisine had a special appeal.

We brought her famous cookbooks and traveled to many French restaurants around the country.  We experienced some great French restaurants in New York, Pittsburg, and Washington D. C. We were lost and uncertain when ordering food in Paris, but felt comfortable in a bistro in New Orleans.  Closer to home, we tasted some great French cuisine in Houston and Dallas.  We then challenged Chef Johnny Poche, with his Cajun roots and culinary training, to create some special flavors here in College Station.

Our menu will have some classic dishes and some dishes with Cajun flair.  French with a southern flair.  Our Menu will be in a constant state of evolution with new dishes based on the season and ingredient availability. Bon Appetit.

Journey…

We asked our friend Chef Johnny Poche to develop a menu for us. He trained our opening chef and staff how to make our inaugural menu and his exceptional culinary knowledge created a menu reflecting some of the best known French dishes. Chef Johnny also paid tribute to his own Louisiana roots with some menu items influenced by the merger of French and Cajun foods and flavors. While Chef Johnny has moved on to other projects we greatly appreciate his contribution and know he is just a phone call away.

Chef Johnny has now turned the kitchen operations over to the talented Chef William Farzley II. Chef Will is a graduate of Johnson & Wales University in Providence, Rhode Island. He has broad experience operating restaurants, hotels and country clubs around the country and Puerto Rico. He has a special flair for French cuisine and he spent time at the famed Le Cordon Bleu Academy in Paris. Chef Will takes special pride in developing people and he taught as a culinary instructor at the Art Institute of Atlanta. Chef Will loves to create weekly menu specials.
